The Society of Spirits, a quickly growing community of distillers and industry professionals, is putting on its second online education symposium. Free and open to the public, the livestream will be on YouTube at 11 am PST on Friday, January 26th.

Jake Capron is the Director of Malting Operations for Proximity Malt, based out of the San Luis Valley in Colorado. Jake oversees all malt production at Proximity's Monte Vista, CO and Laurel, DE regional malting facilities.

Zach Gaines is the Director of Raw Materials for Proximity Malt, based out of Fort Collins, CO. Zach manages barley and small grain producer programs for Mountain West and Mid Atlantic sourcing regions.

Dr. Harmonie Bettenhausen is the current Director of the Hartwick College Center for Craft Food & Beverage where she is focused on collaborative research and extensive testing involving grains, malts, beer, spirits, dough, and breads. She completed her Ph.D. in the Heuberger Lab at Colorado State University where she specialized in omics-based research and biochemistry of small grains. Her publications have covered not only these topics, but also areas as broad as peppers, wheat, and chocolate. Harmonie has been involved in the brewing industry since the early 2000s and is now extensively investigating the relationships of grains, malt, and end product metabolome to sensory and quality factors.
